BTW I'm into "smoking" these days, not the "wacky tebake" smoking, well not these days, but do meaty pork bones into bacon bones in my smoker. A week in a salt and brown sugar solution, with a bit of herbs and spices. Then 2 hours in the smoker including a hour baste in a paste, can make your own, but I just use a particular brand of Hoisin Sauce from the Asian shop, works just as well. The step-son was getting me 20Kg of meaty bones (sawn) for $60, cheap as chips.
